Pretzel Toffee

Pretzel Toffee
 
Butter toffee candy with pretzels and chocolate.

Ingredients
  • 1 cup butter
  • 1 cup sugar
  • 2 cups pretzels (approximately)
  • 1 cup dark chocolate chips
Instructions
  1. In a heavy saucepan, melt butter. Add sugar, and stir to dissolve.
  2. Continue cooking and stirring until it is the color of a brown paper bag.
  3. Prepare a sheet pan (I recommend a quarter sheet pan) by lining with parchment paper or a silicone liner, or by generously buttering.
  4. Cover pan in a single layer of pretzels. Pour cooked candy onto pretzels as soon as it reaches the desired color.
  5. Immediately top with chocolate chips. Let chips melt for a few minutes, then use a knife to spread like frosting.
  6. Let candy cool by chilling in fridge for about an hour. Use a large knife to break into pieces.
  7. Store in an airtight container in the fridge or freezer.

coconut macaroons

Ingredients

  • 1 1/3 cups flaked coconut
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 2 egg whites
  • 1/2 teaspoon vanilla extract

Directions

  1. In a small bowl, combine the coconut, sugar, flour and salt. Stir in egg whites and vanilla; mix well.
  2. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325 degrees F for 18-20 minutes or until golden brown. Cool on a wire rack.

RECIPE INGREDIENTS
1 cup plus 2 tablespoons butter or margarine, softened, divided
2 cups packed brown sugar
2 eggs
4 teaspoons vanilla extract, divided
3 cups quick-cooking oats
2 1/2 cups all-purpose flour
1 1/2 teaspoons salt, divided
1 teaspoon baking soda
1 can (14 ounces) sweetened condensed milk
2 cups (12 ounces) semisweet chocolate chips
1 cup chopped walnuts

DIRECTIONS
In a mixing bowl, cream 1 cup butter and brown sugar. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, 1 teaspoon salt and baking soda; stir into creamed mixture.

Press two-thirds of oat mixture into a greased 15 by 10 by 1-inch baking pan.

In a saucepan, combine milk, chocolate chips and remaining butter and salt. Cook and stir over low heat until chocolate is melted. Remove from the heat; stir in walnuts and remaining vanilla.

Spread over crust. Sprinkle with remaining oat mixture. Bake at 350 degrees F for 25 minutes or until golden brown. Cool. Cut into squares.

RECIPE INGREDIENTS
2 1/3 cups currants or golden raisins (sultanas)
1 cup cold strong tea
1 cup brown sugar
2 cups self-rising flour
1 egg
Butter, for serving

DIRECTIONS
In a bowl, combine the currants, tea, and sugar and leave to soak overnight.

Preheat the oven to 350 degrees F. Butter a 9 by 4 by 3-inch baking pan and line with parchment or waxed (greaseproof) paper.

Stir the flour and egg into the currant mixture and pour into the prepared pan. Bake for 1 1/2 hours, or until a skewer inserted in the middle of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.

Serve the cake sliced and spread with butter.(optional)

Impossible broccoli pie

    Thaw broccoli crowns in a 9" pie plate, layer with onions and then cheese.

    In a large bowl, combine eggs, milk, Bisquix and pepper, beat together well.

    Pour mixture over broccoli in a spiral motion (otherwise it may take too long to cook in the middle).

    Bake for 25-35 minutes at 400F (a knife poked into the middle should come out clean).

Toffee Cookies

CRACKER TOFFEE
Unsalted saltines
1 c. sugar
1 c. butter
1 1/2 c. chocolate chips
Chopped walnuts
Foil a cookie sheet. Cover the cookie sheet with the saltines so that they are touching each other.

Melt butter, add sugar. Bring to a boil and continue boiling for 3 minutes, stirring constantly. Pour mixture over crackers and bake at 400 degrees for 6 minutes.

Banana Bread

Banana Bread Recipe

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

I use Splenda 3/4 c. and I add a 1/2 teaspoon of cinnamon. I also like to make a spread of cream cheese with a little milk added, a little Splenda and vanilla or other flavoring.
